Marinated Sirloin Tips and Shrimp Skewers

  • 1 lb sirloin tips (cut into 1 1/4 inch cubes)
  • 1 lb large shrimp (peeled & deveined)
  • 2 tbsp plus 1 tsp soy sauce
  • 4 tsp balsamic vinegar
  • 4 tsp olive oil
  • 1 large garlic clove (minced)
  • 2 tsp brown sugar
  • 1/2 tsp freshly ground black pepper
  • cherry tomatoes
  • red onion
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 garlic cloves (minced)
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • canola oil (for oiling the grill)

Instructions

Marinade the Proteins
  1. Beef: Whisk the soy sauce, balsamic, olive oil, garlic, brown sugar, and pepper in a bowl. Toss with the beef cubes. Cover and chill for at least 1 hour or up to overnight.
  2. Shrimp: Toss the shrimp with the olive oil, lemon juice, garlic, oregano, red pepper flakes, and salt in a separate bowl. Marinate for 15 minutes tops (or it will "cook" in the lemon juice).
  3. Prep Skewers: Soak wooden skewers in water for 30 minutes
  4. Alternate skewers with beef, shrimp, tomatoes, and red onion.
  5. Preheat your grill to high heat (450°F to 500°F). You want a scorching hot grill to get a nice exterior sear quickly without overcooking the inside of the beef. Make sure your grill is clean to prevent sticking. Using tongs holding a paper towel soaked with canola oil, wipe the grates where you will be grilling. Place skewers on the grates. Grill for 2 to 3 minutes per side. Remove immediately when the shrimp turns fully pink and opaque. The center of your steak will be a perfect, warm rare.
